HAVTORN & AMARETTO
Mixed using our Havtorn (Glögg)A modern twist of a classic sour combines the rich & tangy notes of our Seaberry Glögg topped with a luscious Amaretto foam.
Ingredients
40mlHavtorn (Glögg)
20mlForest (Gin)
20mlLemon
25mlSyrup
2DashAngostura Bitters
*Amaretto foam
Combine everything in a shaker and shake well with ice. Double strain and top with Amaretto foam
*Amaretto Foam
- 200ml Giffard's Orgeat
- 600ml Simple Syrup (1:1)
- Zest from 1 orange
- 5ml Orange Blossom Water
- 4 egg whites
Boil the simple syrup and add the orgeat, orange zest, and orange blossom water before it cools. Let the mixture sit in the refrigerator for at least four hours, preferably overnight. Strain out the zest and add everything to a siphon. Add 4 egg whites to a 1L siphon. Charge with 3 cartridges and shake well between each cartridge. Allow the foam to stabilize for at least 30 minutes in the fridge before serving.
